Ingredients
1 pack Eden's Nuggets |
2 cups coconut custard |
1 tbsp season blend |
1 tbsp chopped escallion |
1 sprig of thyme |
2 tbsp grated turmeric |
1 large chiffonade carrot |
1 medium diced onion |
1 tsp minced garlic |
1 whole scotch bonnet pepper |
2 tbsp cold pressed coconut oil. |
Method
Cut Eden's Nuggets in large irregular shapes and set aside. Measure coconut custard and set aside. In a large skillet, heat oil until hot. Add minced garlic, diced onions, grated turmeric and whole scotch bonnet pepper. Sauté for about 1 min, then add coconut custard. Bring to boil and allow to simmer for about 3 mins. Add Eden's Nuggets, chiffonade carrots, and chopped escallion and simmer for 3 more mins. Remove from heat and serve.
